It is believed that sorrel may have come to Jamaica from Africa; references to a Jamaican sorrel go back to the 1700s.
The sorrel plant is and annual shrub, normally planted in August and reaching maturity in December.
After flowering the sorrel petals fall of leaving the sepals (fruit), these become enlarged and turn crimson as they mature.
Jamaican scientists have now found a way to harvest the Jamaican sorrel plant all year.
A beverage made from the fruit of the sorrel plant is made by steeping the sepal in hot water with pimento and ginger for about 24 hours. It is then decanted and sugar is added and rum, if desired.
It is the favourite Christmas drink of Jamaica.
